Sweet Potato Casserole
3 cups Sweet Potatoes mashed
1/4 stick Butter
2 Eggs
1 tsp. vanilla, nutmeg, and cinnamon
1 1/4 cup Sugar
2 cups Evaporated Milk
Mix above ingredients with hand mixer. Pour into a greased baking dish. Use a 9 x 11 dish for one recipe. You can double the recipe and use a 10 x 15 dish. Bake 45 minutes at 350. Should be set. You can make this part ahead and top later.
Topping
2 cups Cornflakes crushed
1 cup Pecans chopped
1 cup Brown Sugar
1/2 stick Butter melted
Melt butter and add cornflakes, nuts, and brown sugar. Mix well. Spread on casserole and bake 15 minutes at 350.
One recipe feed 6 to 8 people. If you double the recipe it feeds 15 to 17 people.
