2 Eggs
1 Cup Corn Meal (I use white meal)
1 teaspoon baking powder
1 teaspoon salt
1/8 teaspoon baking soda
1 Cup grated Cheddar Chesse or Mexican Cheese Blend
1 Cup Corn fresh, frozen or canned
10 Pickled Jalapenos chopped fine (to reduce heat remove seeds and ribs)
I sometimes add a splash of the pickled jalapeno juice for extra spice. (Optional)
1 Cup Sour Cream (optional)
1 Cup Buttermilk
Mix all together.
Heat cast iron skillet with a little vegitable oil in preheating oven. Pour in batter. Cook 350 for 1 hour. Enjoy!!!
